Choice of Cake

The quality and taste of your cake is every bit as important as the design, so Suzanne carefully bakes all the cakes herself, using the finest ingredients available – organic chocolate, free range eggs, local creamery butter, to name a few. Suzanne believes that the taste of the cake reflects the quality of the ingredients used, and would never, ever compromise on quality by using anything other than the best raw materials. All the cakes are baked from Suzanne’s own tried and tested recipes, which have been developed and enhanced over many years of baking.

If you are having more than one tier, you may wish to include different cake types, thus catering for everyone's tastes.

Popular choices include:

Rich Fruit Rich Fruit – the traditional celebration cake, a wide selection of dried fruits are soaked in brandy and cream sherry for a few days, to allow the flavours to develop. The finished cake is fed regularly with more brandy and cream sherry, to ensure a moist flavoursome cake, full of succulent fruit. The cake is coated with a layer of almond paste (marzipan), then finished with sugarpaste.
Madeira Madeira – a rich, dense but moist cake, delicately flavoured with orange or lemon rind and juice, also coated in almond paste and sugarpaste.
Chocolate Fudge - quality organic plain chocolate makes this a delicious moist and rich cake, it is filled with milk chocolate fudge ganache and may be coated with chocolate buttercream, ganache or chocolate paste and sugarpaste.
Vanilla Sponge – light, buttery vanilla sponge cake, filled with vanilla buttercream and Suzanne’s own home-made raspberry jam. Usually coated with a layer of sugarpaste.
Carrot – a mildly spiced, orange flavoured cake, given its unique moistness by the addition of grated carrot. The cake is filled with vanilla or orange buttercream and may be coated in almond paste and/or sugarpaste.
Raspberry & White Chocolate – a delicious combination of refreshing raspberries and white chocolate chunks, enhanced with the addition of ground almonds and coated with white chocolate fudge ganache. Makes a fabulous summertime dessert cake.

Suzanne bakes each and every cake specially to order, so if you or your guests have any special dietary requirements, this can be accommodated – from dairy- or gluten-free cakes to cakes containing no nuts or a different type of jam.

You may have any size or shape of cake you wish. Usual cake sizes range from 2” (5cm) individual cakes to 14” (35cm) large base tiers.

Popular size combinations:

2 tier 6"/10" or 7"/10"
3 tier 6"/8"/10" or 6"/9"/12"
4 tier 4"/6"/8"/10" or 6"/8"/10"/12".
5 tier 4"/6"/8"/10"/12" or 6"/8"/10"/12"/14".

Cakes may be cut into small, 1” (2.5cm) fingers and served with tea or coffee, or served as dessert, in which case the portions will be larger – a minimum of 2” (5cm) x 1” (2.5cm). As a rough guide, the following show the approximate number of portions which can be cut from different sized cakes:

Cake Size Number of Portions
Square Round 1" fingers 2"x1"
4" 5" 10 5
5" 6" 16 8
6" 7" 24 12
7" 8" 36 18
8" 9" 50 25
9" 10" 60 30
10" 11" 80 40
11" 12" 100 50
12" 14" 130 65
14" 16" 170 85

If your chosen style of cake does not serve as many portions as you require, you may wish to have extra cutting cakes made. These are baked and iced to the same exacting standards as your tiered cake; the only difference is that they will not be decorated, therefore costing less than a decorated cake.

Equally, if you do not require as much cake as your chosen design would provide, the inclusion of one or more faux tiers will ensure an impressive display without the leftover cake!
